Mid Terms.
This week we started doing midterms. So far they have gone well and Ive felt good about how I've done. Tomorrow is my Italian midterm, which should be the hardest of the week.
Monday: On monday in Italian regional cousine we made a pork
chop roast with patate rosso (roasted potatoes). First we cut the meat off of the bone and rubbed in rosemary, sale grosso (rock salt), pepper,
sage and cut holes in the meat that we stuffed with chunks of garlic. We made sure to vigoirously rub the meat with the seasoning. We then prepared the potatoes for roasting by boiling them for a short period of time. We then cubed them, covered them in olive oil and leftover spices. We then tied the meat with string so that it would retain its shape and set it back on the bones it was cut from. We placed the meat on top of the pile of spuds splashed more oil and roasted on high heat for 20 minutes. After 20 minutes we poured white wine on top and turned the heat down. While it was cooking we took our mid-term, answering questions about recipes, italian culinary history and cooking techniques. When the food was done we enjoyed succulent meat and perfectly seasoned roasted potatoes.
Tuesday: Today we had intro tp professional cooking. Our regular teacher, Desiree, was in New York at a Beard foundation event so we had a substitute. His name was Lino and although he knew what he was doing and was a good teacher we did things differently. He had people do different jobs in the recipe, all the way to the finish. Usually each person, or at least each pair, prepares the whole recipe. I did not like this way at all, as I didnt get to see some of the steps. We made a risotto fritter, with a softer variety of risotto usually used in desert. We cooked the risotto and mixed pecorino cheese, parmigiano and chopped prsely with the rice. We rolled them into balls and placed mozzarella and peas in the middle. We then rolled the balls in white flour then beaten egg and finally fine bread crumbs and placed them in hot oil to fry for about 5 minutes. They turned out tasty and we ate them as we took our mid terms. We next had Wine appreciation where we went directly to the mid term. We answered questions about what you can learn just by looking at wine, how wine is made, the steps of wine making followed by a wine tasting. Tonight I went and studied for my Italian class with Brittany and am getting ready to study more with Scott.
The pictures on the river are from when me and Brittany walked down to the Arno last weekend. Periodically there are these stone ledged in the river and some of them you can walk onto. We went and laid there for a while. Its a cool feeling laying in the middle on the river with water just a few feet away. Ive included other pictures that I previously hadnt posted.

I remember reading about some of those James Beard Foundation events featuring Apicius chefs--too bad you had to do assembly line cooking while your teacher was gone.
It's great that you can be in the river like that right in the city. The photos taken from the water are really interesting.
